 How to Make a Dr. Seuss The Cat in the Hat School Lunch

I'm not sure that there's a more iconic children's literary character than Dr. Seuss' The Cat in the Hat. He's definitely on the Mt. Rushmore of children's book legends. It has been awhile since I made a Dr. Seuss school lunch recipe for my kids, but since it's his birthday this week, along with Read Across America Day, it was definitely time. These fun book recipes always bring a smile to my kids' faces so I'm not ashamed to admit that I took a bit longer to make these lunches this week.

My three kids have developed different tastebuds when it comes to certain foods so the background of the pinwheel sandwiches in each of my kids' lunches are all different. Feel free to fill the sandwich with whatever ingredients your child prefers. The three varieties I made were nut-free spread and strawberry jam, grilled cheese and turkey (pictured above), and pesto, turkey, cheese, and fresh spinach. Follow the directions below to see how to make the rest of this Dr. Seuss lunch for your children!

Ingredients: Flour tortillas, black food coloring marker, Babybel cheese, pinwheel sandwiches, goldfish crackers, cut sweet peppers, snap peas, fun cereal for dessert.

Directions:

1. Make your favorite pinwheel sandwiches. Flatten the bread using a rolling pin, spread on ingredients, roll it up and cut it into pieces. Place in main compartment of lunchbox and drop on Goldfish crackers.

2. Cut the Cat in the Hat's head out of tortilla. To make it easy, print off a photo of him from the internet and trace around it with a knife. Draw the facial features using a food coloring marker. You can pick one up at your local craft store or on Amazon.

3. Cut Babybel cheese into pieces, leaving the red wax on half of the pieces. Arrange Cat head and hat as shown in photos on top of sandwiches. Don't forget to use extra red wax for his bowtie. 

4. Cut two circles out of the leftover tortilla and write Thing 1 and Thing 2 on them. Place in side compartment with snap peas and sliced sweet peppers. I thought the sweet peppers looked like something out of a Dr. Seuss book!

5. Pour some fun colorful cereal into second side compartment. I felt this looked like something Dr. Seuss would create as well. As an option you can put in some bits of fruit roll to give even more color.
