I don't have a magic solution for slowing life down, but I have figured out a plan to make sure I save time with a delicious recipe at the beginning of the week that I can use to save even more time during lunch the next day! This Chicken Rice-A-Roni Heat & Eat Bowl recipe will be your go-to when you’re looking for a quick and delicious meal on those super busy days.
The key to this meal is the new Rice-A-Roni Heat and Eat Rice. This rice can be kept in your pantry and you can pack it in your bag to take to work. They cook directly in their microwaveable pouch in 90 seconds, you can have fully-cooked rice in any of its three delicious flavors -- Garlic and Olive Oil, Herb and Butter or Spicy Spanish. While the convenience is definitely a plus, Rice-A-Roni Heat & Eat Rice have a lot of great flavor that make them a great base for this tasty bowl.
Microwave Chicken Rice-A-Roni Bowl
4 servings
Chicken Ingredients:
2 six-ounce chicken breasts (these will be cut in half for a serving size)
2 Tablespoons olive oil
2 tablespoons salt-free lemon pepper seasoning
3 garlic cloves crushed
3 tablespoons freshly chopped parsley
Broccoli Ingredients:
4-6 cups fresh broccoli
2 tablespoons of olive oil
2 cloves of crushed garlic
1 lemon for juice
Directions:
Chicken:
1. Preheat oven to 400 degrees.
2. Brush on olive oil. Drop on crushed garlic, salt-free lemon pepper, and parsley.
3. Place chicken in glass baking dish and bake for 22-25 minutes or until internal temperature is 165°.
4. Let rest for 5 minutes and serve.
Broccoli:
1. Rinse broccoli and cut into individual pieces. Add to pot and cover with water.
2. Bring to boil and reduce heat to low. Simmer for 3 minutes, then drain.
3. Heat oil and garlic on medium heat. Add broccoli and cook for four minutes.
4. Drizzle on lemon juice.
Microwave Bowl:
Cut one serving of chicken into chunks. Store one serving of broccoli and chicken in a covered microwave-safe bowl in the refrigerator.
Reheat at work directions:
1. Heat Rice-a-Roni Heat & Eat Rice in microwave according to package directions.
2. Remove cover from bowl and heat broccoli and chicken in microwave for one minute or until warm.
3. Pour rice into bowl with broccoli and chicken, stir, and serve in bowl.
