Slow Cooker Beef Barbacoa Dinosaur Tacos for Family Dinner Night!

Whether it's National Taco Day, a Tuesday night, or pretty much any other day of the week, my family is ready to consumer as many tacos as possible! We thought we would shake things up a bit by "boldly" going prehistoric with our dinner. We found these Old El Paso Bold Bold Nacho Cheese Stand 'N Stuff Taco Shells on Amazon and my kids absolutely loved the cheesy flavor! Since we had the taco shells, I was inspired to build some dinosaur themed tacos using a Stegosaurus as my model. We also tried our hand at making slow cooker beef barbacoa, which is now our go-to taco filling. These free standing food art tacos are easy to create and so fun to build at home with your family!

Of course your first step is heading to your local store or to Amazon to pick up these Old El Paso Nacho Cheese flavored Stand 'N Stuff Taco Shells. These are the same corn shells you love, with some nacho cheese flavor thrown in. However, they also stand on their own which makes it so much easier for your kids to load them up with Stegosaurus meat...I mean their favorite meat, veggies, salsa, and more. In fact, I think the Stand 'N Stuff shells are a vital part of helping to make taco night a quick and delicious family meal that goes beyond the average taco shell. The other important part would be following my instructions below to make some dino-mite slow cooker beef barbacoa Stegosaurus tacos!

Instructions:
1. Cut and prepare all of your favorite taco ingredients. We used Old El Paso Stand 'N Stuff Taco Shells, lettuce, beef barbacoa in the slow cooker, black olives, tomatoes, cheese, and radishes.

2. For the beef barbacoa, we followed the simple instructions on the package for Old El Paso Slow Cooker Beef Barbacoa Seasoning Mix. The flavor was perfect for taco night!

3. For each dinosaur taco, you will need four "L" shaped legs, a long tail, a rectangular head, triangular spikes for the back, and two eyes. Everything is made from cheddar cheese except for the eyes. Those are two circles cut from white cheese and bits of black olive for the middle. Use photo below to help you make the shapes

One important detail to note is that the legs DO NOT keep a regular taco shell from falling over, they are just for looks. To keep the taco standing upright on their own, you will need Old El Paso Stand 'N Stuff Taco Shells because they turn your tacos into free-standing dinos.

4. Heat the taco shells if desired, but it is not required.

5. Serve everything to your family and let them build their own dino tacos!
