Dandy Sweet Corn is our favorite, so we always pick up extra when we see it at our local grocery store. There is something magical about how it arrives at our house just at the peak of freshness. It is so juicy and flavorful that you can just eat it raw. And we have quite a bit. However, these corn ribs have been a huge hit at our house so we wanted to share this simple idea with you. You might just be addicted to them all summer long!

How to Make Grilled Corn Ribs For Your Next Summer Family Meal!

Ingredients: Dandy Sweet Corn, olive oil or melted butter, your favorite rubs or grill seasonings, chopped fresh cilantro, grated cotija cheese, assorted dipping sauces.

Directions:

1. Chop the corn on the cob in half and then in quarters. We stand it up on end to cut it so that we don't crush any of the kernels. Then cut the cob in quarters.

2. Place corn ribs in a bowl and drizzle olive oil or melted butter over the top. Stir until all the ribs are well coated.

3. Place corn ribs in a dish and sprinkle on your favorite rubs or seasonings. I recommend using a variety to give all the ribs a slightly different flavor.

4. Grill at 400° for 25-30 minutes or until slightly charred. Make sure not to overcook them so your barbecue time might vary depending on what model you have. While they are cooking, prep your sauces. We like using a wide variety so that everyone can pick their favorite. My recommendations are salsa ranch, buffalo sauce, guacamole, queso, pesto, BBQ sauce, and truffle hot sauce.

5. Remove ribs from grill, sprinkle on cilantro and grated cotija cheese, then serve.
