 How to Make a Shamrock Quesadilla and Rainbow Sushi St. Patrick's Day Lunch Recipe

If you're mixing cuisines in your kid's lunch, why not do it on St. Patrick's Day? I decided to make a Shamrock quesadilla using heart cookie cutters but I also wanted to try to make sushi. So it made perfect sense to make Mexican food and Japanese food for a lunch on an Irish holiday, right?! Here is how I made these food art recipes for my kids.

Side note, I'm terrible at rolling sushi. I'm sure many of you out there can do a much better job than I did here. I tried to make a rainbow-themed roll which was tasty but I guess I need more practice. Maybe I should watch more YouTube videos on the topic as well. I also used to be really bad at cutting out hearts but then I just bought heart cookie cutters to make my life easier!

Ingredients: Spinach tortilla, orange cheese, mini cucumbers, nori, cooked sushi rice, multiple colors of peppers, red onion, crab, dried mango, pretzels, green M&Ms.

Directions:

1. Use a heart cookie cutter to make shamrock clover leaf shapes. Cut out rectangles for the stem. You will need a top and bottom piece. Cut out smaller top leaves if you want. Repeat with orange cheese. Place cheese between pieces of tortilla.

2. Cook on medium heat in non-stick pan until cheese is melted. Pieces will now be melted together. Use a green fruit or veggie like sliced mini cucumber as a background and place the quesadilla on top. 

  

3. Make sushi using the video above as a guide. I placed the vegetables in order of color: red, orange, yellow, green, purple. Then I put the crab in. This helped make a rainbow theme to go along with St. Patrick's Day.

4. In the other side dish put dried mango, pretzels, and green M&Ms to make an orange and green trail mix.
