Back-to-School Monster Lunch with ALDI!

If you are like my family, you are scrambling to get your kids ready for back-to-school! Between shopping, meet the teacher times, and signing our kids up for all the things, this a crazy time of year. This is exactly why I wanted to share this fun and easy Monster Lunch with you. Hopefully this idea can help you cross one thing off your list as you are running around trying to finish everything else. Thankfully ALDI is also here to make back to school easier. You can find these lunch ingredients, lunchboxes, and backpacks, at your local ALDI store.

We couldn't imagine our lives without ALDI. Our family has been avid shoppers at our local ALDI for a long time. Just this past year we have saved so much money by buying our groceries there. I encourage you to make ALDI your first stop for back-to-school lunch supplies, you might be surprised at the great items you find there!

For this lunch I used the new lunch containers, Adventuridge insulated lunch bags, and Adventuridge backpacks that ALDI has available at your local store. Fun Monster Lunch
Prep time: 20 Minutes
Serving: One Lunch

Ingredients: L'Oven Fresh 100% Whole Wheat Bread, SimplyNature Cashew Butter, Berryhill Strawberry Preserves, strawberries, blueberries, Southern Grove Slivered Almonds, SimplyNature Organic Whole Milk Vanilla Yogurt, Millville Elevation Energy Bar, white icing, Southern Grove Dried Fruit.

Directions:
1. Cut two slices of bread into a square so that they fit into the sandwich container. Spread cashew butter on one slice and then cut a jagged line across that bread slice about a third of the way up from the bottom. This will be the monster mouth.

2. On the other slice spread the strawberry preserves. Place the slices of bread from step one on top of this slice to form the monster face. Make sure to leave room for the mouth to show. Use crust scraps that were cut off the bread to form the eyebrows. You can stick these on by using a little extra cashew butter.

3. Slice a wedge shape out of the top of three strawberries to make mouths. Place them into the long container with their cut side up. Poke two slivered almonds into each strawberry mouth to form fangs. Use two of the strawberry scraps as eyes on top of the monster sandwich.

4. Surround strawberries with blueberries and spoon yogurt into the dip container next to the strawberries. Make sure to close the lid tight!

5. Apply white icing to the top of energy bar to create a "mummy." Use bits of your child's favorite dried fruit for the eyes. Stick them to the energy bar with a small dab of icing.

6. Place everything, along with an ice pack, in the Adventuridge lunch bag and send your kids back to school with a fun lunch that they will remember for years to come!
