Watermelon Pizza Recipe: Our Healthy New Summer Snack!

If you're a parent, you know summertime is packed with hot weather, fun activities, and kids always asking for more snacks! This summer, our family goal has been taking trips making memories together, as well as coming up with new summer lunch ideas, so I thought it was time to try out an easy healthy snack recipe that my whole family would love. Seasonal fruit is a great place to start, so my first step was taking a trip to the grocery store to see what was available.

I immediately thought that watermelon would be the perfect "crust" since my kids are pretty much addicted to this fruit. I was inspired by other recipes on the internet to turn it into watermelon pizza and use vanilla yogurt as the sauce. The next step was to decide on toppings. The strawberries and blueberries looked fresh and fantastic, but you can use whatever fruit is available. More importantly, use the fruit that your kids will eat! For the finishing touch I put a little bit of refreshing mint on top, although this part is optional.
