How to Make An Easy Raspberry Oat Delight Dessert!

You can never have too many tasty, fresh, and easy desserts in your recipe book. This is especially true when there is a holiday, such as Mother's Day, approaching. What I like to do is find dessert recipes that my kids can also help make. My Raspberry Oat Delight is one of those recipes that fits each of these categories.

For years my family  has been making this dessert for birthdays, family get togethers, and even just for fun. It is one of those dishes that, when served, brings the family together. From the fresh raspberries to the refreshing ice cream, this will be the dessert that you make with your family again and again. With Mother's Day coming up, it's the perfect time to try out my Raspberry Oat Delight!

Ingredients: 1 package (12 oz. or 2 1/2 cups) Driscoll's Raspberries, 2 eggs, 1 cup applesauce, 1 cup milk, 1/4 cup dark brown sugar, 1/3 cup white sugar, 2 teaspoons baking powder, 1/2 cup toasted coconut, 3 cups oatmeal.

Directions:
1. Preheat over to 350 degrees.
2. Mix eggs, applesauce, milk, brown sugar, white sugar, baking powder, and coconut. After mixing add in oatmeal.

3. Spread oatmeal mixture in 9x13 inch baking dish and add in raspberries.
4. Bake at 350 degrees for 30 minutes.

5. Remove from oven and let cool.
6. Cut into squares. When ready to serve top with vanilla ice cream and drop additional raspberries on top.
7. Enjoy with your family!

If your kids are like mine, they are always asking for screen time and wondering when they can get their first iPhone. Bear in mind my kids are 9, 5, and 2. I thought it would be fun if I gave them some iPhones like they had been asking for. Since I'm not independently wealthy, I came up with something that was the next best thing...an iPhone sandwich lunch. There was no way they could complain because it even came complete with an App Store!

If your kids are constantly asking for more screen time, give them something you can feel good about, an iPhone LUNCH! It's not only healthier than more screen time, but it's also giving something they have been asking about for awhile. I made this lunch in an Easy Lunch Boxes container with a Lunchbox Love note.

How to Make an Awesome Airplane Lunch For Your Kids!

If your kids are into planes and flying like my mine are this simple but awesome airplane lunch is for you. It is so easy this will be one of the shortest posts I have written because it will only take a few sentences. The great thing is that your kids won't know if didn't take you all night to make so milk it for all it's worth. It's not that your kids don't necessarily deserve a complicated lunch, but let's be honest, sometimes simpler is better. This is especially true on nights like tonight when I'm stinking exhausted.  So get out your Easy Lunch Boxes container and easily create this in about five minutes.

Pee-Wee's Big Holiday Lunch

Just saying this is going to make me feel old. It might even sound a bit weird. Regardless, it's the absolute truth. My kids are obsessed with Pee-wee movies on Netflix right now. You heard me right. It started with Netflix releasing their new Pee-wee's Big Holiday movie where Pee-wee tries to get to New York. Now they are incessantly searching Netflix for more Pee-wee shows.

It makes me feel old because I remember watching Pee-wee as a kid. It's weird because Pee-wee hasn't seemed to age much while I pull a muscle bending over to pick up a stuffed animal. However, the movies are fun and silly, which is something that is nice to see. I am glad Pee-wee is back. To celebrate I made a Pee-wee's Big Holiday lunch for my kids for school! It features his iconic suit and bowtie in a sandwich, his name in fruit and vegetables, and the New York skyline in cheese because New York is his destination in the movie. Star Wars The Force Awakens Rey and BB-8 Lunch

Where's Rey? Maybe you've heard the complaints about Rey and her lack of appearing in the Star Wars Force Awakens toy line. Well, if you can't find her in the stores, make her in a lunch! I tried something a little different in this lunch to create a little bit of a layering effect. I made a Rey sandwich that represents her scavenger outfit that she wore on the planet Jakku. Of course I also had to throw in BB-8 and also some light sabers.
