Our secret sweet ingredient is Dandy Sweet Corn, but beyond that, you have the freedom to be flexible with this easy recipe idea!
Dandy Sweet Corn is our favorite, so we always pick up extra when we see it at our local grocery store. There is something magical about how it arrives at our house just at the peak of freshness. It is so juicy and flavorful that you can just eat it raw. And we have quite a bit. However, these corn ribs have been a huge hit at our house so we wanted to share this simple idea with you. You might just be addicted to them all summer long!
Ingredients: Dandy Sweet Corn, olive oil or melted butter, your favorite rubs or grill seasonings, chopped fresh cilantro, grated cotija cheese, assorted dipping sauces.
Directions:
1. Chop the corn on the cob in half and then in quarters. We stand it up on end to cut it so that we don't crush any of the kernels. Then cut the cob in quarters.
