With St. Patrick's Day right around the corner, you can never have enough festive snack ideas. This is why is I came up with these fun shamrock sandwiches featuring Red Sun Farms cucumbers! Your whole family will love these little sandwiches for lunch, or even an afternoon snack.
These Red Sun Farms artisan cucumbers add just the right amount of crunch to the sandwiches. Plus they have a crisp edible skin and are packed with flavor! Cucumbers are a favorite in our family so we are constantly trying to find new recipes to add them to. They are very versatile so we always have them on hand.
Ingredients: Red Sun Farms Artisan Cucumbers, whole wheat bread, cheddar cheese, tuna salad.
Directions:
1. Cut a piece out of a cucumber and then slice it in half. Use a heart shaped cutter, or just a sharp knife, to make a heart shape. Repeat two more times. You will need three heart shapes for each sandwich. Cut a rectangle shape out of cucumber for the stem. You will need one for each sandwich.
2. Cut a circle out of bread and cheese. I used a circle cookie cutter to make it easy.
3. Spoon tuna onto the bread circle. Top with the circle of cheddar cheese. Arrange cucumber pieces on top as shown, forming a shamrock. Serve to your family!
